Good Morning, Sunshines! If you follow me on Instagram, then you may have seen this picture for my “Tropical Paradise Green Smoothie Bowl” inspired by a children’s yoga class I was preparing to teach.
Last week we hosted “summer camp” at the speech/occupational therapy clinic where I work, & I played the role of yoga teacher! It’s been many moons since I had the opportunity to teach children’s yoga & I was so excited to offer it, as it is something that I am truly passionate about. I absolutely love teaching yoga to children, especially children with special needs. For the most part, they really respond well to it, especially when we get to the relaxation portion of the class. For me, it was as exhausting as it was rewarding. Teaching back to back yoga classes for three hours every morning is no small feat, & come Friday, I was beat! But, I was also teaching one of my favorite classes from my Yoga Rascals CYTT ~ “Destination Hawaii” where we ride bikes on the boardwalk, swim with dolphins, sharks & other sea life, do sun salutations atop a volcano, & go surfing. So, in order to fuel myself well for my final day of teaching, I whipped up a breakfast treat that was equally reminiscent of the Hawaiian Tropics, & nourishing. The result? A delicious green smoothie bowl complete with naturally sweet tropical fruits, filling chia seeds, protein rich kale, zesty ginger root & energizing matcha powder.
- ¾ - 1 cup coconut milk
- 1 small handful of chopped kale
- ½ a frozen banana
- ¼ cup frozen pineapple
- ¼ cup frozen mango
- ½ tsp matcha powder
- ¼ tsp fresh grated ginger root
- Place all ingredients in a high speed blender & blend until smooth & creamy.
- Pour into a small bowl & garnish with chia seeds, shredded coconut, or fresh fruit if desired. Enjoy!
One thing I learned last week…I totally heart smoothie bowls! I need more in my life. I love the smoothie bowl because it forces me to sit down & take a moment for myself in the morning, rather than sucking down a smoothie from a straw. When you work in an often challenging & intense environment, establishing a grounding morning routine is so important. Take time for some meditation, movement & eat breakfast mindfully. It sets a beautiful pace for your day.
