Happy 4th of July morning! My non-festive mood has lent itself to keeping me free of social plans, except for a scheduled “phone date” with my BFF on the East Coast, & busy with boring household chores. I may or may not drag myself out to see some fireworks tonight. It’s yet to be determined. However, I didn’t want to be too much of an unpatriotic curmudgeon, so I made an old fashioned classic American breakfast – WAFFLES! – vegan of course, & used my super easy cheater recipe.
To make them festive, I incorporated all the colors of our stars & stripes. For “red,” I folded in fresh strawberries. For “blue,” I topped the waffles with fresh blueberries. A pat of coconut spread covered “white,” however a vegan whipped topping would’ve taken it to an entirely more festive level. A little drizzle of agave syrup finished the job.
- 1 cup Bisquick baking mix (surprise, it’s vegan!)
- ¾ cup water
- ¼ cup almond milk
- 1 flax “egg”
- Mix water, almond milk & flax egg with a wire whisk until well incorporated.
- Chop strawberries & fold them into the batter.
- Pour batter onto a preheated waffle iron.
- Bake for approximately 4 minutes, or until golden.
