The first thing I tried was the “Hearty Granola.” I really love granola, but tend not to keep it around the house because I can polish off a whole box in a matter of a day or two. This was nice because it came in a single serving container, so once it was gone, I could not go back for more. Fresh N’ Lean’s 100 % organic granola is made with “rolled oats, organic walnuts, almonds, sunflower seeds, vanilla extract, & grade ‘b’ maple syrup.” I enjoyed mine with some homemade almond milk, sliced banana & fresh raspberries. It was nothing fancy, just a simple granola, but it definitely hit the spot!
The next dish I tried was by far my favorite. I am all about the “bowl” & this had a wonderful combination of veggies. This “Brown Rice Bowl” was packed with “organic brown rice, shiitake, button & portobello mushrooms, lacinato kale, carrots, peas, onion, nutritional yeast, coconut oil, garlic, thyme, black pepper & sea salt.” This bowl was filling & flavorful, & made for a perfect lunch alongside a fresh green salad.
As I am following more of an ayurvedic type system with my diet, I tend to keep dinner very light. Ayurveda believes that lunch should be the largest meal of the day. This is when our ‘agni’ or digestive fire is the strongest, & our bodies have ample time to digest the meal & use the calories for fuel. Dinner should be served early & kept light, so the body is not using too much energy for digestion when it should be winding down & preparing for rest. Therefore, a seasonal soup is a perfect choice. As my days are packed with work & my evenings are spent with friends, at the gym, or the yoga studio, I don’t have a lot of time to prepare dinner every night. I usually make a pot of soup on a Sunday, to reheat throughout the week. Some Sundays are far too busy for meal prep, so I was so grateful that Fresh n’ Lean included a few soups & stews in my delivery ~ like this “Dutch Style Split Pea Soup.” To be honest, split pea soup has never been a big favorite. Childhood memories of gloppy green soup have stayed fresh in my mind. But once I read the ingredient list, I decided it was worth giving split pea soup a second chance. This soup consisted of “split green peas, yellow & red bell pepper, carrot, cauliflower, onion, garlic, cumin, coriander, smoked paprika, black pepper & sea salt.” I decided to toss in a few handfuls of fresh spinach as well. The soup was delicious, definitely not the split pea soup of my formative years! It reminded me more of the “lentil dal” soups I tend to make at home. The combination of spices made for a delicious & flavorful broth. I see split pea soup in a whole new light!
Also sent to me was a White Bean Stew & Oatmeal, both were delicious, convenient & easy to prepare.
