Pumpkin Spice Oatmeal

Ingredients
  • 1 cup gluten-free rolled oats
  • 1 cup water
  • ¾ cup almond milk, preferably homemade
  • 3 Tbsp pumpkin puree
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • dash of clove
  • pinch of pink sea salt
  • 2 dates, pitted & chopped
  • ½ tsp vanilla
  • 1-2 Tbsp maple syrup
  • handful of chopped walnuts
  • handful of golden raisins or dried berries
  • ¼ apple, chopped
Instructions
  1. Combine oats, water, pumpkin, milk & spices in a small sauce pan over medium heat.
  2. Once oats begin to boil, turn heat down low, add the chopped dates & stir.
  3. Let simmer for a few more minutes, stirring occasionally, until oats are cooked all the way through. Remove from heat & add vanilla & maple syrup.
  4. Top with more almond milk, dried fruits, nuts, apple & nut butter.
