June is filled with birthdays in among my friends & family, & with my Mom’s & cousin’s birthdays back-to-back, I wanted to bring sweet birthday treats into our family business office.
I typically prefer to make cupcakes from scratch, using my trusty favorites from VCTOTW, but I have one heck of a busy week, so I’ve been short on time! Fortunately, with a little help from Cherrybrook Kitchen, I was able to whip up these lovelies in a flash! I first heard about these cake mixes on the Tamra Davis Cooking Show. She used the chocolate cake mix to create “Peanut Free (& beet colored) Red Velvet Cupcakes” for her son’s school bake sale & raved about them. So a few months ago, while shopping at Henry’s Market, I saw the Yellow Cake & Vanilla Frosting mixes on the shelf & grabbed them…knowing they’d come in handy one day!
Earth Balance, water, & a few tablespoons of almond milk was all I needed to turn these mixes into moist cupcakes with luscious vanilla frosting! The cake was light & fluffy, & the frosting was SUPER BUTTERY! I decided to add some shredded coconut to balance out the flavor!
In addition to the cake & frosting mixes, Cherrybrook Kitchen offers a variety of quick, easy, & relatively healthy mixes that will have you baking up delicious cookies, pancakes, & brownies with little effort! I think I still prefer the DIY method from scratch, but these are a great alternative when you are in a pinch!
